About the Recipe

I love pasta, and I love noodley soup. So I call this concoction Spaghetti Soup, or "Duh, Why Didn't I Think of This Before" soup?

This came out really freakin good for a first shot, & it was really easy.  It was a little spicy, which I love, so if you don't like spicy, tone down the crushed red pepper.  I might add some more vegetables or some ground beef next time to make it like a Bolognese sauce/soup.

I don't like parmesan cheese, but if I did, I'd probably grate a bunch over the top. 

This would be awesome with ravioli or tortellini. 

Keep an eye on the cook time/temp. You don't want the tomatoes and onions and mushrooms to turn to mush. Vegetable consistency is important. Mine came out fantastic.    

You should try this. And dip garlic bread in it too. Aside from the Italian sausage & meatballs, this is probably pretty good for you. I guess this could be considered a lower carb version of a pasta dish if that's your thing.

I'm sure there are similar type soups out there that I just never tried or heard of.  But since I never heard of it & wanted to adventure myself before checking google, here's what I came up with: 

Ingredients

What I used:

  • 2 Italian sausages (I used spicy)

  • 4 roma tomatoes (diced)

  • 1 can of crushed tomatoes

  • garlic (like a clove or two or three

  • Vegetable boullion powder (no msg)

  • 1 tspn crushed red pepper

  • 3 tspn italian seasoning

  • 1 can of diced tomatoes

  • 1 tspn of oil

  • 7 white mushrooms

  • 1-3 glasses of red wine

  • 10 small frozen meatballs (who's got time to make homemade meatballs?)

  • 1/4 cup diced red onion

  • 1 tbspn cornstarch (dissolved in cold water) 

  • 5 cups of water

  • two cups of your favorite pasta sauce.  Or whatever sauce you have. or whatever you have a coupon for. 

  • whatever pasta you want.  I used fettucine. 


Preparation

Here's how I used it:

1) Drink a glass of wine.

2) Place the following in a large pot and place on medium heat: 

  • diced tomatoes

  • can of diced tomatoes with juices

  • crushed red pepper

  • 2 tspns of vegetable boullion

  • 10 frozen meatballs

  • 1 tspn olive oil

  • 2 cups of pasta sauce

  • 5 cups of water


Stir. 


2.5) In a separate pan, brown the Italian sausage. When those are done, slice them and place them in the pot of other stuff. 

2.75) In ANOTHER separate pot, cook the pasta.  Leave it a little bit al dente. When it's done, rinse it with cold water to stop the cooking. Save a little of the starchy noodle-water & add it to the soup.

3) Drink another glass of wine. 

4) Bring the pot of soup to a boil, then lower heat to simmer.  

  • Add the Italian seasoning

  • Add the sliced white mushrooms

  • Add the diced onion

  • stir in the cornstarch to thicken (optional)

  • add garlic


Turn the heat off and stir. 


Throw some of those noodles in a bowl, then add some soup.  the noodles will cook a little bit more as is cools.  Enjoy.
